Gluten Free Doughnuts!

Yummy, soft cake buttermilk doughnut holes or counter top baker Doughnuts!

I have been using the following recipe–It’s a modification of the Betty Crocker Donut holes recipe from the old BC cookbook.

I have made it both as a baked doughnut in my Nostalgic Baker that my son got me for Christmas and as deep fried doughnut holes.

1 C Better Batter AP GF Flour
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp fine kosher sea salt
1/4 tsp nutmeg (ground–I use fresh grated in mine)
1/4 C sugar
–Mix all the dry ingredients in a bowl with a whisk
Then add
1 large egg
1 tsp vanilla
2 TB canola oil
1/2 C plus up to 2 TB Buttermilk (more is used when making baked)
Mix until smooth.

Heat oil to 350 degrees use a 1 TB cookie scoop to drop doughnut holes in to oil–cook until golden brown. Mine will actually roll over by themselves. They usually are done in about 3 minutes (give or take) use a metal slotted spoon or a spyder to lift out the cooked doughnuts and drain on paper towel. These are yummy rolled in powder sugar or cinnamon sugar or dipped in a vanilla glaze.

Or Baked–in oven 350 degrees (follow directions that came with your doughnut pan)
Counter top baker–follow directions that came with your baker.

Ruffled Necklace Scarf

I've been on a crocheting kick lately. Here's my newest -- a Ruffled Necklace Scarf a free pattern from Lion Brand's web site.

This was a fun little project that I did with some of my own hand spun yarn. It is between a worsted and light bulky in weight. So, it made the motifs larger than the pattern would normally make but it is fun to wear. It was dyed with Koolaid in a fun combination of Lime green and Blue Raspberry.

My sweet hubby took the photos with his phone. He played with a few filters from a program that he just got-- Pixlr-o-Matic an Android App.

Amazing Bread!

I love this bread--Shhhh---Don't tell my husband.
I made this bread from a wonderful recipe by the  lovely Nichole Hunn of Gluten Free on a Shoestring. She is a wonderful writer and so much fun to visit on her site! I have enjoyed every recipe that I have ever made from her cookbook--Gluten Free on a Shoestring.

So this bread...it is made using a Water Roux- a mixture of gluten free flour and water that is heated to a thick slurry. This is a magic mixture that makes the bread so lovely, fluffy, moist and tasty. I did brush the top with melted butter for a bit of softening on the top crust and it just looks pretty too. :)

Time to share again...

Oh My! No new posts since August? How can that be???

Welll....work, family and being busy with doing different crafts. I have been knitting, crocheting, sewing, drawing, gluten free cooking and embroidery.

Here's a photo of my newest embroidery project (the only one of my crafts that I have actually photographed so far-- and that was done for a contest by the designer of the design I embroidered)

It was done quickly the day before Valentine's to make it in to the contest.

I loved the design and how the center design in the heart looked like a butterfly.

I'm a basic stitch kind of embroiderer --this was done with, chain stitch, satin stitch, back stitch, stem stitch and french knots.

The design left all the decisions to the person doing the stitching--I like that kind of pattern--I get to choose the colors and the stitches I want to use.

This looks very springy to me, Hearts, butterfly, 'flowers', 'leaves', stems. The big heart done in the chain stitch in gold is like the unending loop of love. :)

I'll be working on getting more photos of my creative efforts posted soon. :)

Cooking up a storm!

Just a quick post as I'm having so much fun cooking new things and not getting much else done. I love finding new recipes and trying them out and I have been in a cooking mood.  Weird...right? It's the hottest part of the Summer and here I am, coming home from work and baking!

First I made a lovely Rustic Apple Blackberry pie. I cooked it up on the grill and didn't even burn it!! I got the gluten free crust recipe from Gluten Free on a Shoestring Nichol is a charming lady with a very creative and clever way of writing, she also has AWESOME gluten free recipes.

Next I came across a recipe on Smitten Kitchen for Homemade Oreo cookies. Chocolaty, creamy, crunchy dunkable Oreo Cookies! I followed her recipe exactly EXCEPT I used Better Batter Gluten Free All Purpose flour. It worked really well.

All of the photo credit goes to my awesome hubby Mark, he's also my chief taste tester, um...guinea pig, foody victim and general good guy with a cast iron tummy!

I am off to figure out what I'm going to do tonight...sweet or savory? It's so hard to decide!

New pillowcases for a new bedroom!

Just a quick note from me to you. I haven't taken any photos of the updated bedroom yet but I have finished 2 new embroidered pillowcases and I do have a photo of them. :)

The designs are from Doodle Stitching motifs by Aimee Ray. I had a blast doing these and my husband is pretty impressed with them too. All of the flosses that I used were of the variegated kind so I could just thread up the needle and start stitching.

I'm looking forward to playing around with more of the designs from this book. I have a couple handkerchiefs that need something special so I can give them as gifts. I think those will be my next projects.
